The first time I made this dish, I used frozen haddock as called for in the recipe. I had a problem with the haddock thawing during cooking.
Thereafter, I used fresh haddock and the dish turned out perfectly! It was simple and delicious.
Another suggestion - substitute canned diced tomatoes, available in several varieties, for fresh tomatoes. A good alternative if fresh tomatoes aren't reasonably priced.
