Cucumber Roulades

Guests loved it...looked very fancy!

This was such a hit at my New Years gathering that I am making them again. They look beautiful and taste great. To cut down on the messiness of getting the cream cheese in, try this: Mix the cream cheese with some sour cream...about a 1/4 cup. You don't want it too runny, but a little less firm. Then use an icing bag with tip. It makes them look even better and is much easier!

It was a very big hit at a party I had recently. I really like the fresh taste!

My guests loved these. Be sure to make the cucumbers short otherwise they aren't bite size and cause a mess.

I'm not a smoked salmon fan so I make this with chopped proscuitto. Every one loved it. (Make sure you chop the proscuitto in rather small pieces, it's too chewy to bite through gracefully if you don't.)

This was very easy and everyone at the party enjoyed them. I didn't use seedless cucumbers (couldn't find them). I used a melon baller to remove the center, which also removed the seeds. I also added a spoonful of sour cream to the recipe.

It is easy to make in advance and serve.

VERY BLAND !! Will have to re-work the filling with seasonings ... maybe some ranch?

Well, 1st off, I'm a guy and I made it with 3 cucumbers for a party. My wife and daughter immediately said "Cute!" They are clunky and it's hard as heck to keep the cream cheese in while you jam in the fish hunks and the little dill sprigs. Very messy. But most liked them.

Very well received at a holiday party, especially those who are avoiding bread
