This was very difficult to make. Rolling the chocolate into the rounds caused the chocolate to start to melt, and made all the pieces come out with flat sides. They tasted fine, but if the chocolate was left out of the refrigerator, they would begin to melt.
I made these twice during christmas week , and will be making them again before this week end . Gave as gifts and every one loved them ... They are Sinful ! a lil messy on the hands , but thats why they make soap and water ! :)
My husband LOVED them, but they were very difficult for me to make. I guess I'll just have to try again and see if it gets easier. :)

Wow these were awesome! The first thing gone out of almost everyone's treat box that I made for gifts. I will be making these for xmas gifts every year, but many more batches! I also took the advice of another reviewer and put the chocolate in ziplocs to cool then cut the corner off and piped it onto the cookie sheets. Then I used toothpics to dip and covered the toothpic holes with sprinkles. I made 2 batches - one regular and one chocolate raspberry which was terrific.
I made these and received raves galore especially from my chocoholic friend who is picky about her chocolate treats. I too let the mixture set so they were cold and easy to form. I make chocolate-covered candy every year so this is one recipe I have added to my collection.
I did not like these AT ALL. The cream cheese made the truffles taste sour and I even added PLENTY of sugar to them to sweeten them. They were also way too messy. Chocolate everywhere! Oh well, you have to try things sometimes to know if they work for you.

OMG... Whoever suggested piping out the truffles ahead of time- YOU ARE MY HERO! I can't believe I didnt think of this sooner. This is the second year I've made these. They're always a HUGE hit!! This year alone, I've made over 7 batches! I just piped out 50 truffles in a matter of minutes!! I wish I would have read this comment before the 100 I made yesterday.
I had a very hard time with this recipe. The cream cheese/chocolate mix got soft when I dipped it in the chocolate. The chocolate didn't turn out smooth---it thickened due to the cream cheese melting. It was disasterous! I've worked with melted chocolate before. Maybe I the cream cheese balls weren't cold enough. Never again!
