These were a hit at every party I brought them to. People thought they looked professional! Definitely use the cold water trick if they start getting sticky, or just pop them in the freezer for five minutes.
I made these to take to a ladies holiday recipe swap and was so embarrassed. I saw one woman spit hers out and throw it in the trash! I double-checked to make sure I used the right chocolate and I did but they were too bitter, plus very impractical to make. All that work for nothing.

Here's how I changed it - I added 1 tsp Vanilla to the cream cheese & chocolate mix, and then refrigerated that over night... made evening it was just easier for me. Next morning I scooped balls out with a 1/2 tsp spoon, made over 36 balls this way and was just the right size, I then refrigerated them again for a few hours. I added 1 tsp vanilla and 1 tablespoon powdered sugar to the melted chocolate coating. I rolled the balls in the coating and then rerefrigerated... chocolate set up wonderfully, wasn't too sweet or too bitter... went over well with my family even the non-chocolate lovers.
I formed them into balls then froze them and dipped them in chocolate they turned out to be inexpensive beautiful gifts
My extended family happily munched on the truffles until they were gone. I intend to make them next Christmas. I dipped them in cocoa powder, confectioners' sugar, and nuts.

Everyone loved them and I made the mxture first and then I left it in the Refrigerator for a couple of days until I formed them into balls. I didn't have a promblem at all then after I shaped them into balls I put them back into the Refrigerator for a couple of days and then I dipped them in the chocolate, I thought they were easy and I would make them again, everyone who tasted them loved them.
I Had So Much Fun Making These! I actually didn't dip the truffles in chocolate again. I just rolled the truffles in chopped nuts. Looks ad tastes great! :) Thanks!
My daughter made these for Christmas for her first grade teacher, and they were a smash hit!
