I made a double batch for a cookie swap - I recommend making one batch at a time. I did two batches in one bowl and the dough was very wet and I added about 1/4 cup more flour. I also used half again more peppermints since I ground them in a food processor and it made them very fine. The white chocolate in the freezer bag was a STELLAR idea! I also used a separate rolling area on waxed paper and shaped them on a cookie sheet so I could fit more on a sheet.
I added chocolate extract, I chilled the dough, and I had to use smaller than tablespoon size pieces. They are tasteless, flat and unattractive. I made them for a cookie sale, but will probably trash them.

Had problems rolling the dough, even put them in the frig and it didn't help. Didn't like the taste, too bland. Will not make again.
I had no problems at all. I took these to a cookie exchange today and everyone loved them. I added the melted chocolate before adding the flour, used chocolate extract and added mint extract to the white chocolate. I also added 1t of salt because salt brings out flavors.I chilled to dough just enough to work with it. They came out perfect. Maybe the people who had problems had old baking soda. After stripeing with chocolate, I put them in the freezer so it would stick to the cookie. I hope this helps others who want to try this recipe because with all the not so good reviews, I was skeptical but these were good. Will make again.
I think I had the same problem - the cookies turned out all flat. Maybe I over beat the batter? I had to refrigerate the dough for several hours before I could even roll it into the cane shapes and even then, they flattened out. Definitely DID NOT look like the picture!!! Any idea what went wrong?
I think I may have blended too much, because when I finished it was more like frosting than dough. So then I cooked in a baking sheet and decided to use a cookie cutter to cut out christmas trees. Either I just overcooked it, or the recipe isn't as "cookie-like" as I was hoping. It's more like a brownie. I'm really disappointed.
The prep time was more than 30 minutes and I didn't even roll all the dough into candy canes. Maybe I made mine too big, but I used a Tablespoon measure and they turned out too puffy. The flavor is ok, almost like chocolate cream cheese frosting. Kids enjoyed rolling the dough, but other than that it's not worth the trouble.
Tasted Horrible, threw the cookies away. My 2 yr old wouldn't even eat the cookies. And they were very very hard to shape into candy canes.
Did not like the flavor at all. Boring, didn't taste enough like chocolate
