I went over to a friends house who made these thin mints and they were awesome!! I will deff be making some of my own thin mints thats for sure.

I made these according to the recipe and they are wonderful. When dipping into the chocolate, I used a tweezer and it made the job easier and less messy. These light crispy cookies will be on our holiday cookie tray for years to come.

Instead of the baker's chocolate and peppermint extract, we used a bag of mint chocolate chips. Very simple to melt in the microwave and use as directed. I made these with my 10-year old son for a snack for his Cub Scouts den. Needless to say, the mint thins didn't last very long!

They are light but very flavorful. Can't wait to make them again.

This is a wonderful recipe to carry to parties or give as gifts. I used spearmint extract instead of peppermint because that was what I had; it worked just the same. I will try the peppermint extract next time.
