yummmmmmmy. we grated peppermint white chocolate kisses on to the tops of the cookies instead of peppermints. this will make my cookie exchange next year...too late now :( very fun and easy to do. husband loved them. daughter likes GS thin mints better.

I just finished making the peanut butter variation of this recipe, and they are chilling in the freezer. Had to try just one, and they are yummy! However, next time for pb variation, I think I will use milk chocolate instead of semi-sweet. Going to try mint this afternoon, with white chocolate. Definitely a keeper and so easy!

This was a very easy recipe that received favorable compliments when presented at a workplace Christmas luncheon. Everyone wanted the recipe and were surprised at how easy they were to make! Many didn't even know they were made from crackers! They truly thought they were cookies!

This was surprisingly good. It was amazing how much they actually tasted like 'thin mints' and they are very easy and inexpensive to make too.

ABSOLUTELY NUMMY!!!!!!!!!!! wow! really really great taste!! I made a batch... tasted a few.. put them on a plate, vacuum sealed and put them in the freezer till our christmas party in 6 days!!! woooo hooo!!

Tjese were very good. Made them for a ladies night and everyone loved them. Couldn't believe that they were made with Ritz crackers. I used softer Andes peppermint chips instead of the hard candies. Might cut down just a bit on the extract next time.
