This was a very easy recipe that received favorable compliments when presented at a workplace Christmas luncheon. Everyone wanted the recipe and were surprised at how easy they were to make! Many didn't even know they were made from crackers! They truly thought they were cookies!

This was surprisingly good. It was amazing how much they actually tasted like 'thin mints' and they are very easy and inexpensive to make too.

Tjese were very good. Made them for a ladies night and everyone loved them. Couldn't believe that they were made with Ritz crackers. I used softer Andes peppermint chips instead of the hard candies. Might cut down just a bit on the extract next time.

So easy and delicious! Very addictive. I made the peanut butter variety for my son who dislikes mint and also the mint variety. I used Andes candies as someone had suggested.
