These are absolutely wonderful! We made the mint and the peanut butter ones. Both were huge hits. We've already made three batches and will be making them again.

This is an excellent recipe! We've used white chocolate and milk chocolate and have loved them both. Our family has gone through three batches in two weeks. Tastes just like girl scout cookies!

I made these a gifts for the faculty at my school. Everyone raved about them and couldn't believe they were made from Ritz crackers. Excellent recipe!

Use 1/3-1/2 teaspoon of peppermint extract and only 16 Ritz Crackers. Use a tong for submerging the Ritz Cracker in the chocolate (make sure the chocolate coating is nice and thick), as well as, for pulling it out. Refrigerate until ready to eat. They are AMAZING!

These went over well, but they were just average in taste and smaller in size than I'd realized. Read other posters' comments for ways to improve this recipe. Nice to put in treat bags.
