Chicken Lo Mein

Chicken Lo Mein recipe

Stir up this version of a Chinese menu favorite with chicken, crunchy peppers and smooth peanut sauce. Even with all the flavors, it's low-cal and low-fat.

After making this a few times at home for my family, I made it for my chuch group of 200. Everyone really liked it. I added sliced mushrooms, water chestnuts and extra dressing.

This is getting added to my "old stand-by" list. This was awesome! My 6 year old LOVED it. My 4 year old liked the chicken but she just ate plain noodles with it. That was easy....just pull out a few before you mix it in the sauce. You could play with this recipe in a ton of ways....what ever you have around. Just about any veggies could be in this, meat, no meat....etc. etc.

Try it next time without the peanut butter. But it was really good. Kids loved it. Green and orange peppers got my kids to try it. And noodles.

LOVE, LOVE, LOVE this recipe. It's a regular in my house! I omitted the peanuts because I just don't like them, but the recipe is still great. I love the flavor of the dressing! Favorite of my picky eater!!

My family nor I liked this very much. It had a very overpowering soy sauce taste. I didn't add the peppers and onions cause no one likes them, so that may have caused the soy sauce being so potent. But I don't think I will try this again.

Great tasting and super easy. I used a bag of frozen stir fry veggies instead of frozen peppers and onions just because that's all I could find. Will definitely make againg - family loved it!
