Made this last spring before it got warm and loved it. I was surprised because I really don't care for beans much at all. I couldn't find no salt beans or fire roasted crushed tomatoes, so I just used chopped fire roasted tomatoes and regular beans with salt. It was delicious and I just told my husband last night that it is getting that time of the year to fix it again. I think that will be dinner tomorrow night after I get everything from the grocery.

Absolutely delicious! We loved it! However, my husband misses the ground meat, so I plan to dice up some mushrooms, onions, and celery and sautee those. The mushrooms should add great texture as well as flavor and protein. I am planning to make it tonight with those addition. On a scale of 1 to ten with ten being the best I would give it an 11.

This was very easy and very good. I put it in the crockpot to save time. Great vegetarian recipe.

made it with changes using what I had on hand. Beans, cheese and seasonings as directed but used 15 oz can of fire roasted tom. and 8 oz can of tomatoes and chiles, threw in some garlic powder, black pepper & sea salt. Son devoured the whole thing with Sour cream & cayenne pepper.
