Southwestern White Chili

This dish shakes up your chili bowl with chicken and white beans, then sneaks in a little heat and tops it off with a sprinkle of cheese.

What You Need

Tbsp. KRAFT Zesty Italian Dressing

lb. boneless skinless chicken breasts, cut into bite-size pieces

small onion, chopped

cans (15 oz. each) white beans, rinsed

can (14-1/2 oz.) fat-free reduced-sodium chicken broth

can (4 oz.) green chiles, undrained

tsp. ground cumin

1-1/2

cups KRAFT Mexican Style Finely Shredded Four Cheese

Tbsp. chopped fresh cilantro

Make It

HEAT dressing in large saucepan on medium-high heat. Add chicken and onions; cook 7 min. or until chicken is done, stirring occasionally.

STIR in beans, broth, chilies and cumin. Bring to boil. Simmer on medium-low heat 10 min., stirring occasionally.

SERVE topped with cheese and cilantro.

Special Extra

For spicier chili, add 1/2 tsp. ground red pepper (cayenne) along with the beans, broth, chilies and cumin.

Creative Leftovers

Have some leftover turkey? Substitute 3 cups chopped cooked turkey for the cooked fresh chicken.

For A Thicker Consistency

Mash some of the beans with a fork during the simmer time.

Great flavor and easy! I used ground turkey. I Mashed 1 can of the beans to thicken it. I garnished it with white rice and taco-seasoned cheese.

I made this with ground turkey meat. I added some cayenne pepper, salt and served it with white corn chips. It was a nice change to the usual chili recipe.

My girlfriend and I won a chili cook off with this recipe! We used pepper jack cheese instead but followed the recipe otherwise... Glad we made a triple batch because it was gone in 30 minutes!

This has been a very big hit with my family and friends for the last couple of years. I start with raw chicken on occasion, but it's usually my "go to" recipe to stretch leftover chicken. I use two times the dressing, beans, cumin and chilis and add S&P to taste. Also, to help thicken, I don't rinse the beans -- just lightly drain. Super easy and fast with impressive results!
