I served this cake to 14 of my "Church Lady Friends" and they all wanted the recipe. They thought that it was delicious. Again Kraft Foods made me look great and the recipe was easy to follow.

i made the cake according to your directions using the first 3 ingredients and chopped pecans. but i topped the cake by poking holes with a straw. then i topped it with two packs of jello sugar free cream cheese pudding, mixed as directed and added the spice, "cake mix spice" instead of pie spice

i really liked the cake and it wasn't difficult to make. the taste of the pumpkin pie spice takes a little getting used to. i think next time i would leave it out. i was also a little hesitant with the orange jello, but i could hardly tell it was in there. very good....i will make it again!

I used sugar free jello and the cake still came out moist and delicious. A nice lighter version of carrot cake.

I speed set the jello to make it almost set before putting it on the cake.. it didn't get soggy & the jello set up faster in the cake. Whenever I make a poke cake, I do this & the jello goes into the holes & stays there instead of spreading through the cake & making it soggy.

Personally I LOVE "poke" cakes...especially white cake with raspberry or strawberry jello...I will try this recipe becausr carrot cake is my most favorite cake and a different version should be great!

I would not use the jello either,plus I would leave out the carrots and use fat free Philly cheese, but I would ADD nuts to my cake mix.(pecans or walnuts) The butter could be substituted with a low fat as well. hummmm.. I think I will back this one. lol
