What You Need

cup KRAFT Sun Dried Tomato Vinaigrette Dressing

small boneless skinless chicken breast halves (1 lb.)

large red peppers, chopped

cloves garlic, minced

cans (14-1/2 oz. each) no-salt-added diced tomatoes with basil, garlic and oregano, undrained

1/2

cup water

cups instant white rice, uncooked

cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

large tomato, chopped

Tbsp. chopped fresh basil

Make It

HEAT dressing in large skillet on medium heat. Add chicken, peppers and garlic; cover. Cook 10 min. or until chicken is done (165ºF), turning after 5 min. Remove chicken from skillet, reserving peppers in skillet; cover chicken to keep warm.

ADD canned tomatoes, water and rice to skillet; stir. Bring to boil; simmer, uncovered, on low heat 10 min. Meanwhile, combine cheese, fresh tomatoes and basil.

RETURN chicken to skillet; top with cheese mixture. Cook, covered, 5 min. or until chicken is heated through and cheese is melted.

How to Safely Handle Raw Chicken

Always wash hands, preparation surfaces and utensils in hot, soapy water before and after contact with raw chicken. Dry hands and surfaces with a clean towel or paper towels. Take special care in washing worn cutting boards as there may be hard-to-clean grooves or cracks that can collect bacteria.

It seemed a little bland. The cheese wasn't really necessary. Next time I would try marinating the chicken; I also pounded the chicken thinner with a mallet so it would cook faster. I would also suggest more spices for more flavor.

I made this tonight and my husband went back for seconds. I loved it too. We will be making it again. The peppers add a lot of flavor!

The fresh tomato and basil at the end made this dish taste like summer. I utilized half a can of spaghetti sauce and one can of tomatoes versus two cans of tomatoes. Also added S, P and crushed red peper.

the whole family loved this, even the kids. I did not have instant rice so I made traditional rice and just omited the water in the recipe and did not add the rice to the chicken until dinner was served.

To save time, I bought a cilantro mix that included pre-diced tomatoes and peppers from my grocery store. Makes it super easy!
