Bruschetta Chicken Skillet

It’s bruschetta. It’s chicken. It’s skillet-simple. Sounds like it’s everything you could ask for. Oh wait—there's one more thing: You use just one pan.

What You Need

cup KRAFT Sun Dried Tomato Vinaigrette Dressing

small boneless skinless chicken breast halves (1 lb.)

large red peppers, chopped

cloves garlic, minced

cans (14-1/2 oz. each) no-salt-added diced tomatoes with basil, garlic and oregano, undrained

1/2

cup water

cups instant white rice, uncooked

cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

large tomato, chopped

Tbsp. chopped fresh basil

Make It

HEAT dressing in large skillet on medium heat. Add chicken, peppers and garlic; cover. Cook 10 min. or until chicken is done (165ºF), turning after 5 min. Remove chicken from skillet, reserving peppers in skillet; cover chicken to keep warm.

ADD canned tomatoes, water and rice to skillet; stir. Bring to boil; simmer, uncovered, on low heat 10 min. Meanwhile, combine cheese, fresh tomatoes and basil.

RETURN chicken to skillet; top with cheese mixture. Cook, covered, 5 min. or until chicken is heated through and cheese is melted.

I've made this a few times now... I just use canned tomatoes. Also, I like this w/ whole wheat pasta and the chicken cut up. It tastes really good reheated, too. My husband and I like this dish a lot.

I cut the chicken in smaller pieces which cut the time in cooking - and used long grain rice which I cooked first instead of instant as it is healthier

I used brown rice and the sauce help disguise the texture so the kids loved it!

This chicken was sooooo good!! Even my husband, who isn't a big fan of tomatoes, loved this dish! The only thing I changed was I added more sauce because it wasn't very saucy and we liked it like that.

This was an amazing recipe and we totally enjoyed it
