Bruschetta Chicken Skillet recipe
It’s bruschetta. It’s chicken. It’s skillet-simple. Sounds like it’s everything you could ask for. Oh wait—there's one more thing: You use just one pan.

This was very tasty and my family loved it. I think for 4 chicken breasts it made way too much rice though, so next time I will cut those ingredients in half.

Extremely simple recipe to make. My whole family loved it. I did bump up the amount of dressing to 1/2 cup from 1/4 cup and only had dried basil on hand (from our garden this summer), and it still tasted very, very good.

Wow! This was SOOO good! Since I never use instant rice, I didn't feel like buying it just for this recipe. If you'd like to go old school, simply use 1 cup of uncooked rice in place of the instant. Also, you'll need to simmer it covered for about 15-20 minutes instead of uncovered for 10 minutes. It added a few minutes to the total cooking time, but I don't mind, since it's something I always have on hand. I also didn't want to buy an entire bottle of salad dressing for just 1/4 cup, so I used some italian dressing I had on hand, adding about 2 Tbsp worth of chopped sun-dried tomatoes. I also used chicken breast tenders and dried basil with good results.

The rice was very good but the chicken was bland. It makes a lot of rice, too much for 4 chicken breast halves. I used 1 red pepper. Season chicken first!

This was an awsome dish...very tasty and easy to make. The only thing i did differently (by accident) I bought boil in the bag rice instead of instant rice so instead I just added ( 1 ) cup more of water so the rice would boil and soak it up. It didn't affect the taste and worked great. Will definitely make again - Thanks!
