Wow! This was SOOO good!
Since I never use instant rice, I didn't feel like buying it just for this recipe. If you'd like to go old school, simply use 1 cup of uncooked rice in place of the instant. Also, you'll need to simmer it covered for about 15-20 minutes instead of uncovered for 10 minutes. It added a few minutes to the total cooking time, but I don't mind, since it's something I always have on hand.
I also didn't want to buy an entire bottle of salad dressing for just 1/4 cup, so I used some italian dressing I had on hand, adding about 2 Tbsp worth of chopped sun-dried tomatoes.
I also used chicken breast tenders and dried basil with good results.
