The dinner was good and I would make this again, but I would cut several ingredients in half or more. I made it for 4 as the recipe said, but I have enough of the rice w/ canned tomato mix left for 10 more people. 1 cup of rice and one can of tomatoes would have been more than enough and I didn't even add fresh tomatoes after seeing how much was in the pan already.

This recipe is a big hit at my house. I love it because it's quick and easy. My husband loves it because it's full of flavor. When it comes to chicken at my house my southern husband would rather have this heart healthy dish than his granny's southern fried chicken!

I thought it was alright. I forgot to buy red pepper so i didnt have those. The chicken really didnt have much flavor but the rice tasted really good.

This is another recipe that I would use cooked rice instead of the minute rice. I just find minute rice gets too mushy and has no flavor. I think this could be put over good wide noodles (pasta) and it would be just as nice.

I've made this recipe numerous times and it is one my families absolute favorites. The ease of this dish and the taste are phenominal!!!

It was basically all tomatoes. It would have been better with just one can of tomatoes not the two it calls for.

I made the chicken bruschetta when it was distributed as a grilling recipe this summer (& have shared it w/several friends)...it was delicious! The chicken topping can be adjusted according to your taste - add olives, pineapple, hot peppers, whatever suits your pleasure! I can't wait to try it w/the rice - the side dish will already be ready when the chicken is done & only 1 pan to wash!
