My family and I enjoy this creamy broccoli cheese soup at least once a month. It is so simple to make and it's hearty taste keeps the family satisfied! I usually accompany the soup with either corn bread or made from scratch honey biscuits
Very good. I personally needed to thicken it with a flour/water mixture and add salt. Other wise...delish! I also had it with texas toast...makes it even better!
This soup is delicious! I used 2% Velveeta (the whole 16 oz block)and frozen broccoli instead of the veggie mix. It was a little thin, so I just mixed a TBSP or so of cold water and corn starch, added it and brought it to a boil. Soup thickened nicely. Gets thicker as it cools.
I make this for the entire family, but especially for my 91-year old mom. I know she is getting her vegetables in an "easy to chew" way and she loves it! I only use broccoli and cauliflower as I have one daughter who is allergic to carrots, and I use a little less cheese. I also cook the vegetables until they were easy to mash. The consistency is great, the taste is wonderful and everyone enjoys it.
Quick and easy and a good way to sneak in vegetables. I read the comments about it being too thin, so I scaled back and only used 2 cups (or 1 can) of chicken stock. I cooked the vegetables until they were falling apart then used an emersion blender down in the pot and it had a nice consisetency, minus any chunks of veggies. It was a nice cheesey soup!
Very good! I think it tastes like a jazzier broccoli cheese soup! Yummy!
This was unbelievably FAST to make! The soup was a little thinner than I expected, so I added just a touch of flour. But it definitely had awesome flavor!
I was a little leary about this, but I was surprised. It was quick and easy and I really like it! Could be a little thicker, but I can deal with that.

My husband couldn't find the cauliflower, broccoli, and carrot mix at the supermarket, so I used a 16 oz. bag of broccoli and ended up with a delicious broccoli cheese soup. Very easy *and* delicious - I'll be making this one again!
