I used ready prepared mashed potatoes, added the cream cheese and cheese. WHAT A FLAVOR BOOST! I also did not use the regular frozen mixed vegetables. I used several vegetable blends (tomatoes, okra, peppers, onions, and celery; corn, red and green peppers; and peas and carrots; onions, celery,and peppers). I know it sounds like a lot of onions...but it really wasn't. I just hate the green beans and lima beans in the regular mixed vegetables. There are so many new blends out there, I just picked a few and threw them together.
This recipe made quite a bit. I was able to package and freeze 1/2 of it for a later date.
It was a nice, warm meal, on a very cold night.
