Made this last night for my husband who is NOT a white meat chicken eater. He LOVED IT. I also make the Moist Tex-Mex Cornbread. It was a hit as well.

This was a big hit at my house and something that I will make again soon. I served it with yellow rice with black beans and corn.

It was okay, but I edited the recipe the next time and it was much better. I decided to use a touch of chili sauce instead of salsa, and then added some fresh shredded lettuce and fresh diced tomatoes after baking, and kept the sour cream out till baked.

made this last night and it is now a family favorite. I used fresh chicken tenders and added 1/2 pkt of Taco Seasoning to the Sour Cream. This gives the chicken a punch of flavor and also helps the Sour Cream to thicken and not "bake away' so to speak.

I really liked this recipe. The chicken breast were small so they cooked very quickly and mine were a little dry in the end, but the flavor was great! I served with saffron yellow rice and with white corn. I would make this again for sure!
