Yummy!! I made this recipe last night and my husband and I loved it! He is a meat and potatoe guy, but he really liked it. I can't wait to make it again!!

It was really really good. I added cooked ground sausage to the chesse mixture and some spices like adobo, but be careful because it has the potential to become too salty. I didn't cook my pasta prior to stuffing so they were a little hard. I will try cutting the edge of a ziploc bag like they show on cooking school manicoti. I will make this recipe again and again.

I found this recipe a week ago and already mad it twice! My husband, a somewhat picky eater, absolutely LOVED it! And, I have to say that I was pretty impressed when I tasted it, too. We both said that it could have come from an italian restaurant! I made it again for our Superbowl party and it was a hit! I can't believe it is as healthy as it is! I even used fat free ricotta cheese and reduced fat parmesan. You couldn't even tell! This might be our favorite meal!!

My vegetarian daughter loved this. I thought it had a bit too much spinach and that it seemed a bit dry. We added additional sauce when serving. We will make again, with some changes in the filling.

I put the filling in a zip lock bag and cut the corner off. It was a little easier to squirt the filling in the noodle.

I love manicotti but I didn't care for all the mushrooms. Next time, I will try to modify this recipe.
