These are the best cupcakes, light and delicious. I doubled the cupcake recipe the second time I made them, there is plenty of icing for 2 batches.

Made these cupcakes for a spring celebration at work and they were a hit! Absolutely wonderful and easy to make. For an additional wow factor, I added edible sparkle powder to the icing and garnished with candied lemon slices.

I made this recipe into a cake for my mom's birthday and everyone loved it! I also added a few drops of yellow food coloring to the icing and a little lemon zest! YUMMY!

lEMON ANYTHING IS JUST A WONDERFUL DESSERT, BUT THESE CUPCAKES ARE JUST SO GOOD. THE CUPCAKE AND THE FROSTING ARE BOTH THE RIGHT DELICATE LEMON FLAVOR. MY FAMILY LOVED THEM.

If you don't feel like making the frosting or you find this frosting is too thin, "runny", then buy some cream cheese frosting and add the juice to it.

I have made this recipe many, many times and I have never experienced a problem with the frosting. It is never runny...always perfect. All I can say is "WHAT ARE THEY TALKING ABOUT"?

I noticed that there were a lot of comments about the icing being runny, when I made these, the icing was the perfect consistancy. This is a great recipe. Yummy!
