Lemon-Cream Cheese Cupcakes

What You Need

pkg. (2-layer size) white cake mix

pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding

cup water

egg whites

Tbsp. oil

pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

1/4

cup (1/2 stick) butter, softened

Tbsp. lemon juice

pkg. (16 oz.) powdered sugar

Make It

HEAT oven to 350ºF.

BEAT first 5 ingredients in large bowl with mixer on low speed until moistened. (Batter will be thick.) Beat on medium speed 2 min. Spoon into 24 paper-lined muffin cups.

BAKE 21 to 24 min. or until toothpick inserted in centers comes out clean. Cool in pans 10 min.; remove to wire racks. Cool completely.

BEAT cream cheese, butter and juice with mixer until well blended. Gradually add sugar, beating on low speed after each addition until well blended. Spread onto cupcakes.

Prepare using PHILADELPHIA Neufchatel Cheese.

Special Extra

Blend 1 tsp. lemon zest into frosting before spreading onto cupcakes.

I made this recipe into a cake for my mom's birthday and everyone loved it! I also added a few drops of yellow food coloring to the icing and a little lemon zest! YUMMY!

lEMON ANYTHING IS JUST A WONDERFUL DESSERT, BUT THESE CUPCAKES ARE JUST SO GOOD. THE CUPCAKE AND THE FROSTING ARE BOTH THE RIGHT DELICATE LEMON FLAVOR. MY FAMILY LOVED THEM.

If you don't feel like making the frosting or you find this frosting is too thin, "runny", then buy some cream cheese frosting and add the juice to it.

I have made this recipe many, many times and I have never experienced a problem with the frosting. It is never runny...always perfect. All I can say is "WHAT ARE THEY TALKING ABOUT"?

I noticed that there were a lot of comments about the icing being runny, when I made these, the icing was the perfect consistancy. This is a great recipe. Yummy!

Loved the cupcake recipe, but the frosty was so runny! It tasted great but sure didn't look like the picture. Go buy frosting, that worked out much better the second time.

The lemon frosting with these cupcakes was to die for. Make sure you take them to a potluck, cause they are BAD to have around the house. You will eat them all!! :)

Best cupcakes ever, and the frosting is delicious...had some leftover and I´ve put on other cupcakes as well, even on cookies the frosting is great. Cupcakes came out beautiful as well.
