I made a variation of this recipe this morning for breakfast. I wrapped 2 small red potatoes in wax paper, & microwaved using my "baked potato" setting. I did not have the dressing, so I brushed the bottom of my non-stick pan lightly with butter. I left the skins on the potatoes, mashed down gently on a saucer using a bowl, and placed in pan. I added a little salt & pepper to the potatoes, I added a small slice of swiss cheese, & then added the Kraft cheddar cheese & the bacon. Delicious! Definitely a keeper.
