Family members that won't eat cranberry - which I love - love this and requested it again. It will be a family favorite for years to come. It is so easy. While I did make some in muffin tins, I also did a mold. It was beautiful on the table and not as messy as the ones in the muffin wrappers.

These have been requested by my family AGAIN this Thanksgiving. I used "mini" muffin pans for smaller portions. They were the HIT OF THE BUFFET TABLE. Suggest that you make them the night before so that they can set up overnight. Makes a lot - recipe can be cut in half for a smaller crowd. Superb recipe, a real Holiday winner!!

I would like to kmow can you substitute mandarin oranges for the pineapple and frozen or fresh orange juice for half the portion of liquid??

i'm going to try it .. but i'm going to make 1/2 and pour it in cups. then refrigerate, then put a circle (cookie cutter) of cheesecake on top of the layer, and make the other 1/2 and pour it on top. i think it will take longer.. but i also think it will be wonderful. and if i keep the piece of cheesecake small, the recipe will coat the sides and the cheesecake will be a surprise.

AWESOME! Great recipe with so little work. My family and friends love this. The minis makes a wonderful presentation served on lettuce leaf. Looked just like the picture!! Thanks for sharing.

Loved it! What a different twist to the traditional cranberry relish. The kids never eat this kind of stuff, but they loved having it in the mini muffin cups!
