Cranberry-Pineapple Minis

These were great! I had many requests for the recipe. Making them in the tins makes for just about perfect serving size. I'll be making these many times!

For people that had trouble getting it out of the muffin paper - I didn't use the paper. Put it straight into the muffin tins and had no problem getting them out and holding its shape.

Delicious recipe! I recently made this to celebrate an early Thanksgiving with my parents before they went out of town for a couple of months. I read just about all the reviews and combined a few of suggestions. 1) I replaced 1/2 cup water with 1/2 cup sweet red wine, 2) I added 1 large orange, cut up and 3) I poured the recipe into a decorative glass bowl. The dish looked beautiful on the table and tasted wonderful! Am definitely making this again. :)

How fantastic. I didn't think the receipe would make 24 servings, but it did. Great tasting for those who love cranberries, and easy to make. Took them to a wedding reception and they were gone before the other desserts.

The very best recipe I have ever had in the 50 years since my mother began serving it to us with our Thanksgiving Feast! I have tried other combinations, but always returned to this. It is wonderful with any roasted poultry.
