I've had this recipe for a while and it's so quick and easy, I do most of the prep work in the AM, adjust seasonings, after work spend 5 mins finishing it up then pop it in the oven. I double the amount of everything, substitute chicken broth for the water and use large breast halves and increase cooking time to 1 hour. As written the serving size is a bit skimpy for our tastes.

Very Good! Great Flavor, quick to make and everyone loved. Did as others mentioned to use spanish rice and taco seasoning on the chicken. DELISH!!!

I absolutely LOVE this dinner! It is super easy and tastes delicious. For a bit more flavor, I add instant spanish rice on the bottom. Also, this recipe is really great since my father has gluten allergies!

This was amazing!! I used a packet of 'Spanish rice' instead of white rice...I put in the packet and the 2cups boiling water it called for into a foil pan, sprayed with Pam. I added 4 chicken breasts, one sliced green paper, and 1/4 cup salsa...baked for 40min. Amazing!! My 5yr and 9yr sons loved it and they do NOT like tomatoes or spicy things!! It was NOT spicy and soooo flavorful! Super easy and will be made again very soon!

My family LOVED this. I fed 2 ravenous teen boys, 2 broke college kids and an athletic teen girl plus my husband and myself on a doubled recipe (except I added extra rice) of this and they actually got full! We added a tad more Mexican cheese and a few white queso Velveeta cubes and topped it with sour cream. The family raved over it!

After reading other reviews, I decided to change this recipe up a bit & found that it worked very well. I lightly seasoned the chicken w/some of the taco seasoning & then used the rest of the packet for the rice. I also put a little salt on the chicken. I put all the ingredients into a casserole dish rather than make the foil packets. I added onions along w/the peppers. I cooked everything for 40 minutes & thought it turned out well. Next time I will probably double the amount of peppers & onions & add some beans

This didn't come out very flavorful for me. If I decided to make this again, I would slice the chicken into strips and season it. The salsa was not enough - it just tasted bland. The rice was good, though. I used instant brown and was impressed with how that part of it turned out.

I will use the taco rice next time -- Lilttle more flavor--- will make again very good!

SO GOOD!! I did sautee my peppers with some butter and minced garlic in the skillet before adding them on top of the chicken. The first time I made this, they came out too hard and crunchy for my liking. This way was MUCH better.
