I made this for dinner last night. My husband & I both thought it was excellent. We do not like alot of spice so it was perfect for us. I think I will add black beans and corn next time. I am not sure I would make ahead as I would be afraid of putting raw chicken in with all the other stuff and leaving it for a long period of time eventhough it would be in fridge. Will make over and over and when family comes !

We loved it! I, too, would make it again. I served corn as a side dish and we spooned it over the opened packet. I think it needs a little salt (for the rice) and I would probably add some onion slices to the packet before baking next time. It is a definite keeper; I sent the recipe to our two grown single sons to add to their collections! :-)

My family loved this recipe! The only adjustment I made was cooking it in one large foil packet and cooking it for 40 minutes. The rice was perfect, chicken tender and it had great flavor! Easy recipe to tweak if someone likes it spicier or milder. Next time I think I will toss in some corn to cook along with it.

Awesome and easy dinner!! Will totally make again and again! Only thing i would change is the seasoning for the rice needs a little boost.

This is my favorite thus far in the fall Food and Family edition! Soooo easy and such a great flavor. Chicken was very moist!

It was a little bland. I will add more season next time. The chicken stayed very moist. I just put the whole thing in a 9x13 dish.

Execellent recipe..fast prep,I did use a littel more taco seasoning than recipe called for... Tastes great, easy clean up...this already is a family favorite!!!

This recipe is wonderful. I cut the chicken in strips, added sliced of onions and we also used a yellow pepper. It was great!! My husband, me, and our two daughters loved the whole thing. My son just ate the rice and the chicken because he is not a big fan of peppers. Chicken stayed very moist. I might add some sliced tomatoes next time.

my grandmother made this today and it was really really good! moist chicken, yummy cheese and rice - excellent! we all added some taco sauce on top to give it some more oomph, but it was great regardless. :)

I have made it Twice and I will make it again and again.. I love it !!!! I made it for my In-Laws and everyone just loved it ...Thanks for such a Great Recipe...
