I was worried the chicken wouldn't be cooked thouroughly but it was perfect and juicy. I cooked for 30 minutes, anymore it would've been dry. I didn't spray the foil first, but drizzled some extra virgin olive oil over all of it before sealing. I really think that's what kept it so moist. We used brown rice and it was just as good and healthier. Also added taco bell sauce along with fire roasted salsa. Next time I will add lime juice and diced onions and season the chicken with salt and pepper beforehand.

DELICIOUS!! I used mexican rice instead of plain and cooked the foil packs for 1 hour. As another member suggested, I added ice cubes to the pack and I had no trouble with it drying out.

Overall had good flavor. I was pleased with how easy and inexpensive it was. My roommate did comment that the chicken itself lacked flavor. But, I made it, and I liked it!

Super easy from prep to clean up!!! Hubby loved it. Seasoned the chicken with Adobe and used yellow and orange peppers along with red and green...Will definitely be making this one again!

My husband & I love this recipe! We did make a few additions such as marinating the chicken in fajita seasoning mix for a few hours. It really gives it extra flavor. Add in some onions. Lastly, instead of plain white or brown rice, we use mexican flavored rice & just don't add the taco seasoning to the rice since it already flavored. Yummy!

I love these foil pack recipe's such a quick and easy way to make diner. I prepare it the night before while the baby is sleeping then stick in the fridge. That way all I have to do is pop it in the oven 35mins before hubby comes home. For this particular foil pack diner I used yellow and red peppers. I also used brown rice instead of white. Finally, I did picante sauce instead of salsa. Very yummy, and my hubby loves it too.
