Awesome easy and filling meal!!!! Substitute Brown rice for white rice and cut it down by 100 cal!!!

I made this for dinner tonight- boyfriend and I both loved it! I sliced the chicken up (more fajita-style), used double the taco seasoning, and added a medium sliced onion. I didn't want to heat up the kitchen, so I did the packs on the grill outside. The results were delicious and satisfying... I will definitely make this again!

This was pretty good....I did use more salsa than the recipe called for and I did have a problem with making the foil packets. Be sure to use big enough sheets of foil.

Super simple! I made this in a 9x13 so I could make a little extra. I added a can of drained black beans, a can of corn, and rotel to the rice. I marinated my chicken as previously suggested. Topped it with onions & green, yellow, and red pepper slices. Baked for 60 min. If you like it hot, you need to make substitutions. We liked it the way it was. Will make again.

I made this last night and it was excellent. I wanted it to be spicier so I added jalapenos.

As I sealed the packets closed, I told my husband I wasn't so sure they would taste very good. HOWEVER, once I opened the packets and saw the rice WAS cooked, I tasted the chicken with the rice - it was EXCELLENT! I added thin-sliced onions to the packet, and when done we used whole wheat tortillas too.

I didn't like the chicken in this recipe. The rice and veggies were delicious - but the chicken juices were running into the rice which made me a little queesy. I would make this again and just not have a chicken breast in my foil pack.
