As I sealed the packets closed, I told my husband I wasn't so sure they would taste very good. HOWEVER, once I opened the packets and saw the rice WAS cooked, I tasted the chicken with the rice - it was EXCELLENT! I added thin-sliced onions to the packet, and when done we used whole wheat tortillas too.
I didn't like the chicken in this recipe. The rice and veggies were delicious - but the chicken juices were running into the rice which made me a little queesy. I would make this again and just not have a chicken breast in my foil pack.
This was so good and so easy! My whole family loved it and I am definitely making it again. The only thing I might do differently this time is try using half the seasoning.
We had limited time the night we decided to make this so we just made it as a skillet on the stove instead of the oven. Added jalapenos at the end and it was great.

I really like this recipe. It's difficult to find something tasty with reasonable sodium content. This was not to bad. The flavor was very good but I used jalapenos and green peppers. will definitely make again.

Loved it! Make all the time! So easy! I changed the chicken a little--cheating a little. I just bought boneless skinless tenderloins, and frozen peppers. :o) Yummy!
This was the most disgusting recipe ever. What a waste of chicken. too much rice, too little flavor. And this was even after I tried to docto rit up with chilis and extra salsa. I guess I excpect my food to actually taste good, that must be why we didn't like this. Take chix breasts, 1 tsp taco seasoning each salsa, cook 35 min at 350 add cheese and cook until melted. Now there is a good recipe w/o wasting any foil! If there was a way to give it no stars, I would have done so
