This kid-friendly recipe was so easy to make with just a few ingredients that I already had on hand!
The first time I made the recipe as directed, but the salsa on top was a deal-breaker for my 12 y/o.
This time I tweaked the recipe a bit by adding a 2.25 can (drained) of sliced black olives and 1 cup of shredded sharp cheddar cheese. Intead of layering, I mixed all of the ingredients together, including the salsa, before baking.
It was SO flavorful! This dish had just enough spiciness for my kids, and was definitely enjoyed by all!
I think next time I make it (probably next week!) I will add a can of drained sweet corn along with the olives and cheese.
