I use rotel instead of tomatoes and add a package of hidden valley ranch dressing mix. I also use one can of chili beans and 2 cans of black beans. Cook the meat with a chopped onion.
Havn't eaten an entire bowl yet, just a few bites out of the crock pot. Boy, it is delicious. I used one can of beef broth instead of water and a 26 oz. can of mild chili beans. I didn't want so many beans. Instead of whole tomatoes I used one can of fire roasted diced. The flavors are coming together really nicely. Been in the crock pot 4 hours now. I will top my bowl with lots of cheese and sour cream. Made a can of Grands corn biscuits and an orange jello poke cake. A simple and delicious meal this will be.
This is a favorite recipe of mine. It freezes well. When I make this, I double the recipe and add shredded cheese (Mexican works well). I've made it for friends and family who rate this high. Now that winter is coming, this is an easy soup to make and so yummy!!!!!!!
Very good, only changes I made was to use 2 cans medium chili beans and 1 mild and added crushed tortilla chips before serving.

I changed it up a bit. Only used 1 can of chili beans and used half beef broth and half water and use frozen corn. I will be making this again. Its on my best soups list. Very Yummy
This was easy to make and it took no time at all. It makes a big pot of soup. So, if you like leftovers for lunch or for another time, you'll love this. It definitely has a mild taste. So, add more spices if you like it spicier. It's definitely a good meal for a cold night or when you just don't have a lot of time.
I noticed many concerned about the sodium. We always substitute for the low or no sodium versions of products such as whole/diced tomatoes or sauce, canned vegetables and even taco seasoning. it will not eliminate the sodium, but reduce it very much.
