After scooping out the potatoes, I mashed as I would regular mashed potatoes with a little butter and milk. I also added real bacon bits to the potatoes before spooning back into their shells.

I don't understand this recipe. How do you heat a microwave to 400 degrees? I thought you meant a regular oven and then the recipe says to microwave 7-8 minutes. I am confused.

I made this for lunch today and wow! creamy, smooth and yummy. I'm making it again for supper! It's easy & quick and you can top it with anything you'd put on a regular baked potato. I used chili, cheese and sour cream on mine. Delicious!
