Great recipe especially with bacon bits added. Someone commented on being confused about oven and microwave both being used. The potato is initially cooked in the microwave and after stuffing is finished in the 400 degree oven. Hope this helps clariy that.
After scooping out the potatoes, I mashed as I would regular mashed potatoes with a little butter and milk. I also added real bacon bits to the potatoes before spooning back into their shells.
Sounds good, quick and easy. Would probably make.
I don't understand this recipe. How do you heat a microwave to 400 degrees? I thought you meant a regular oven and then the recipe says to microwave 7-8 minutes. I am confused.
I made this for lunch today and wow! creamy, smooth and yummy. I'm making it again for supper! It's easy & quick and you can top it with anything you'd put on a regular baked potato. I used chili, cheese and sour cream on mine. Delicious!
