This super quick and easy recipe is PERFECT for a quick lunch and everyone loved it! I used cubed turkey so ours would taste a little meatier, and it was awesome!

I have a home child care and wanted something quick and easy and light for dinner. I used this with fresh sour dough french bread from the bakery and creamy ceasar dressing. The roasted peppers were sooo good in this. I loved it.

This is a great quick, summer, kid friendly meal. Very inexpensive to make, goes great with a small veggie tray or fresh fruit bowl. Enjoy!

I must say..this is pretty tasty. I have eaten this three days in a row for lunch this week and I'm not even tired of it...That's awesome! It's a nice change from the usual. Great flavor..I may try the oscar meyer shaved chicken with it next time.

used tomatoes instead of pepper and chicken instead of turkey - i still thought it was a great recipe for lunch - simple, fresh, and healthy

My husband and I don't like peppers, so we left them out. Leaves it a little flavorless. Might try some tomatoes or onions next time.

Excellent! So easy too! I used chopped up and drained sun dried tomatoes instead of the peppers and added some bacon bits. Can't wait to make again. The whole family LOVED them.
