Great combo of flavors! These are my fav low fat mashed red potatoes recipe. I add a little salt, pepper & dried Italian seasoning.

Have made this several times, my family loves it. Made it for Thanksgiving yesterday, just omitted the parmesan and they were delicious!

This recipe was great! I did have to drain some of the broth before I added the cream cheese cause they looked like they would be running otherwise. Other than that one change everything else was easy and they tasted great with the meatloaf I made for dinner.

I love boiling potatoes in chicken broth! I had never done that before. I didn't measure anything and my potatoes were pretty liquidy so I skipped the sour cream. I just eyeballed the parmesan cheese and the cream cheese. It turned out great!

Awesome. I hate to cook and am looking for the perfect tasting recipe for common things so I can have just one. This is it for mashed potatoes! I did add a little more chicken broth to cook in and I didnt put in the full amount of sourcream. They were still the bomb! Going to try them with fat free sour cream and fat free cream cheese to see if its still just as good. OH, and I added black pepper. They were GREAT fried the next day btw!

yummy!!! I mistakenly used regular cream cheese instead of the neufchatel and it tasted very good. I made it a second time using the neufchatel, I prefer the regular cream cheese. plan on making it again this week

Love it..... I always made mine just the potatoes with pepper and it tasted a lil plain. All it needed was all these other ingredients. Will most definitely make this again.
