A Keeper! Used calamata olives instead of green olives. Will definitely add this to permanent recipe box.

Left out the olives and used a light sun dried tomato vinaigrette and not near as much cheese as the recipe calls for. Delicious still! I served the fish on top of a bed of cooked, chopped spinach. Even my 2 year old and 17 month old ate it up!

The Tilapia Veracruz was wonderful. I didn't include the olives, instead I substituted for artichoke. The dish was very simple to make...

It was freshly delicious and the whole family love it. I served it with some Jasmine steamed rice and they were perfectly together!. I will definitely cook it again. Thanks for sharing.
