What do you call a casserole filled with corn and chicken and fresh peppers layered with tortillas, salsa, sour cream and cheese? We call it one of our faves. You will too.

Substituted red bell peppers and pablano peppers for green bell peppers. Substituted Rotel mild green chiles and tomatoes for salsa. Mixed sour cream into chicken mixture instead of spreading on top of chicken mixture. Half of this recipe fits perfectly into a 11X7 casserole dish. It's very moist and yummy. This is one of the easiest recipes for this type of Mexican Casserole that I've found.

Am I the only dummy? Do you add another layer of tortillas. To me it doesn't read that way. Also why would you need to cook it that long if everything is already cooked. Wouldn't it be too dry.
When I make this, I use Enchilida sauce instead of taco sauce. Love the taste!
Saw the recipe on the back of the cheese package. I followed the recipe but added chopped cilantro, low sodium taco seasoning, and cayenne pepper (for more heat) to my chicken mixture. Soooo good! My boyfriend loved it as well. I'll add black olives and may try diced tomatoes next time. I don't even like Mexican food, but this ROCKS!
I made this recipe when I was desperate for something different and I was VERY pleasantly surprised! My 6 year old, who eats basically nothing, even enjoyed this recipe - although I did substitute the chicken for ground beef because it was what I had on hand. Definitely a keeper recipe in my house :-)
Turned out very good. Probably would add some refried beans, tomatoes, Black Olives, AND Maybe crush some dorito chips and put it on top after baking. So many variations, experiments, and modifications you can make to this dish, and not have to worry about goofing it up. Awesome recipe.
My three boys went back for 3rds! I used Rotel instead of Salsa.I may also use fajita spice on chicken next time.
