Santa Fe Enchilada Bake

What do you call a casserole filled with corn and chicken and fresh peppers layered with tortillas, salsa, sour cream and cheese? We call it one of our faves. You will too.

What You Need

lb. boneless skinless chicken breasts, cut into bite-size pieces

each large onion and green pepper, chopped

jar (16 oz.) TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa

pkg. (10 oz.) frozen corn

corn tortillas (6 inch)

cup BREAKSTONE'S or KNUDSEN Sour Cream

1-1/2

cups KRAFT Mexican Style Finely Shredded Four Cheese

Make It

HEAT oven to 400ºF.

COOK and stir chicken, onions and peppers in large nonstick skillet on medium heat 10 min. or until chicken is done. Stir in salsa and corn.

ARRANGE 6 tortillas on bottom of 13x9-inch baking dish; cover with layers of half each of the chicken mixture, sour cream and cheese. Repeat layers; cover.

BAKE 40 min. or until heated through, uncovering for the last 10 min.

My family loves this recipe. I use equal parts of sour cream with ranch dressing instead of just sour cream. That gives it an extra zing. I also add one can of diced tomatoes along with the salsa. My family insists that I fix this at least once a month.

Delicious and very easy to prepare. My son didn't think it "looked" good but once he tried it, he loved it! My daughter and I loved it too.

I made this and was easy to prepare. If you like spicy be sure to buy spicy salsa.

wonderful recipe. Great for a larger family. Next time I will use a hot salsa instead of mild and less sour cream.

This is really fresh and delicious! This is the second time i made it! Next time, I'm going to cook the chicken in taco seasoning and add black beans!!

I substituted leftover turkey for the chicken, but otherwise made the recipe as is. It was awkward to spread the sour cream, and I ended up mixing it in with the meat layer. I thought it could use some more zip, but the family liked it fine.

I made this recipe for my family...and WE LOVED IT!!! It was DELICIOUS and has became a regular in my house!! I used pineapple mango salsa instead of regular and it tasted SO GOOD!!!

My family doesn't like onions, so I used taco sauce instead. I also spread a little taco sauce on the bottom of the baking dish so the tortillas on the bottom wouldn't dry out. This is delicious!
