After reading many of the reviews I decided to make this recipe. I substituted the chili powder with a packet of taco seasoning. We don't normally use corn tortillas and it made it taste more authentic. This recipe was a snap to make and we really enjoyed it. I will say that browning the ground beef in the microwave was a pain and next time I'll just use the skillet!

I just got done making this recipe and it was alright. To be honest, I wasn't too thrilled with the taste of the corn tortillas but I prefer a crunchier texture so I may do a mixture of tostadas and tortillas(maybe flour instead) next time (although this doesn't make it an enchilada. However the flavor was good. I used taco seasoning and enchilada sauce and chopped up lettuce, tomato, green onion, and black olives with a dollop of sour cream. Along side, refried beans and spanish rice.

Added taco seasoning instead of chili powder to the sauce. Used 15 oz. tomato sauce. My family loved this!

Absolute ease of preparation makes this a winner. I eliminated the tomato sauce and substituted salsa roja (seasoned red sauce similar to enchilada sauce) for extra seasoning. Also substituted Mexican chili powder which I feel adds more spice. Love cooking in the microwave and it looked and served fantastic. I forgot to put my chopped tomatoes on when I put it on the table, but it was fabulous anyway. Oh well, next time........

Pretty bland. Next time, I'll skip the tomato sauce, onions and chili powder, and use enchilada sauce and taco seasoning instead. However, I've never made a "real" meal using just the microwave, and loved that part of it. So easy. It looked really yummy, too, just not enough umph for us.

This was sooo good and fast! I didn't have tomato paste but Iadded taco seasoning to the meat that helped thicken it. So good
