Let me preface this by saying I do not like meatloaf but LOVED this dinner...We subbed bbq sauce for the salsa and stuffing mix for chicken for the crackers. It was AWESOME. Served with some green beans...will definitely be making this on a regular rotation. Made great leftovers for work the next day too.

I rarely eat meat but was looking for something that I could make ahead and reheat easily for quick a quick lunch/dinner. I didn't have crackers so I used about 3/4c. of Stove Top stuffing mix and added some garlic powder because I like my meat heavily seasoned. These turned out great, lots of flavor, and I love the individual serving size.

my husband loved this recipe so much that he actualy comented on it and he has not comented on my cocking since we where married in 1996.Exept for the "that was ok". He thought that I went to a resturant and picked it up to bring it home.

I used stuffing instead of the saltine crackers b/c it holds the shape better. Overall it was very tasty (meatloaf in a muffin pan...who would have thought!) but next time I would probably use more cheese and salsa than recommended in recipe. Also, my friend made this recipe once and she used ground turkey instead of beef and it was delicious!

I made these, both with the salsa and bbq sauce..They were WONDERFUL! Took them to work for lunch- co-workers wanted details..just LOVE your kraftrecipes emails-send them to all my coworkers!!

I wanted to have something already fixed for when my boys get home from school or a ball game that wasn't junk. I thought this would be be great because of the portion size. Along with the mini meatloaf they had a small portion of veggies or a small salad to tie them over until supper. Wrong answer!! One wasn't enough. Needless to say I didn't have to fix supper. Next time I'll hide the others. 5 star for sure!! Marie

I too made this recipe a couple years ago when it was featured with the variations as another person said and it was a hit!!! My whole family loved it!! When I make these I always plan on having pasta later in the week and I use the leftover meatloaves as oversized meatballs. I havent made this in a while but I am going to dig up my old magazine and start making them again!!!

This recipe was featured in a Kraft Foods magazine a few years ago, but it had variations on how to make it. One version I tried was use 1 box of Stove Top (don't prepare seperate just pour in dry mix), 1 cup of water, 1 tsp. Garlic Powder, and 1 lb. hamburger meat and mix it all up. Put in muffin pan, make an indention w/spoon and add bbq sauce. Bake @ 375 degrees 30 mins. Sprinkle Cheese on top & bake 10 more minutes. DELICIOUS!!
