This recipe was featured in a Kraft Foods magazine a few years ago, but it had variations on how to make it. One version I tried was use 1 box of Stove Top (don't prepare seperate just pour in dry mix), 1 cup of water, 1 tsp. Garlic Powder, and 1 lb. hamburger meat and mix it all up. Put in muffin pan, make an indention w/spoon and add bbq sauce. Bake @ 375 degrees 30 mins. Sprinkle Cheese on top & bake 10 more minutes. DELICIOUS!!

You know what? I would never make meatloaf again any other way but in a cupcake pan. I freeze any leftover ones and I think you get more flavor in each one. Great, great idea !

My family loves this recipe. I hate meatloaf, but I love this one! I was really nervous about the salsa, but oh my it is what makes it so delicious! My husband couldnt stop telling people about my amazing meatloaf lol. I recommend serving it with baked potatoes and a veggie! Yum! We have made this quite a few times now and it freezes well for future meals, just add the salsa and cheese after heating your mini loafs and your done!

I was pleasantly surprised by this recipe. I used ground turkey to make it a little leaner and it was great! Only downside was cleaning the pan (I greased it well but still had probs).

This was GREAT! Even my son's girlfriend, who doesn't like meatloaf, liked it. Will become one of my "everyday, anyday" recipes.
