Will double it next time for my family of four. Very easy, delicious, time saving & little ingredients needed.
My husband is not crazy about meatloaf so I hardly ever make it. I came across this recipe and on a whim decided to try it. My entire family loved it! I'll definately be making this one again!
I have made this twice now, my family loves it, I have used mild salsa and a mixture of mild and medium. I did not have any crackers so I used instant oatmeal, they did not know the difference. It does take longer to bake then it says.
I thought these were a little bland.Next time I will add more cheese, some hot sauce & green chiles. I substituted ground turkey for the ground beef, and didn't have any problems with them being greasy. I will make these again.

Review: This recipe was really very good. My family loved it including the picky eater known as my 9 year old! It was greasy though after cooking so I took the loaves out of the muffin tin and set them on a plate, emptied the grease out of the tin and put the loaves back in for the last step of cooking. You definatley will want to use leaner ground beef for this recipe. I still gave it five stars for ease of making and awesome flavor!
These were yummy. I don't like traditional meatloaf so I was excited to try this variation. You definitely need to use lean meat as you don't drain the fat off. I would make again. They were perfect as appetizers and are pretty filling.
Very tasty. cooks in less time than the loaf pan size. my family liked it alot.
I have made this many times, but I substitute crushed tortilla chips for the saltine crackers. Much better flavor!
I messed up and added all ingredints together. It still came out excellent! I make it that way all the time now!!! I also make them in mini muffin tins, bite size goodies.
