Super yummy! 5 year old loved it, 3 year old did not. I substituted the saltines with cornbread stuffing and instead of placing more salsa on top I switched for catsup. VERY GOOD!!!!!

Yum! Very good and a hit with my in-laws! Need to use less fatty meat next time because of the grease, but that did make it easy to get them out of the muffin pan.

This was excellent. I used ground turkey instead of the beef and I love the small meatloafs. Much quicker to cook and very tasty with the salsa and super moist. I will definitely keep this handy to make again

It was easy to make. My husband regularly request "meat loaf the new way"! A hit with the kids too. A little on the greasy side since you cant drain the juices. I try to use the high quality meat with very little fat to minimize the grease.

I made this with grass fed beef and the taste and texture was fantastic, and it was so quick and easy! Having company tomorrow and I'm making it again.
