What a great way to make Caesar salad. Grilling added such a nice dimension. I even grilled romaine heart halves briefly the second time I made it instead of using torn romaine. Super good either way - you've got to try this!

I just cut the chicken in smaller pieces. I did not put on skewers and it still worked fine.

I added some lemon juice, salt and pepper to the bread with the oil before I grilled it. Watch the bread carefully! It burns very, very fast. Other than that, though, I had no problems, and the salad was delicious.

I did a take off on this recipe. I changed it to suite my family's taste. I marinated the chicken in a mixture of coconut milk and coffee creamer, grilled it, and served it on a bed of ranch salad and sprinkled the parmesan cheese on top. It was a hit, and I would do it again!
