This is an easy, cheap dinner and is great for leftovers. The only changes I make are I add corn and black beans for more flavor and texture.

this is a really fast recipe, and really good. I topped each one with some sour cream, lettuce and tomato to make it more like a taco.

What a nice, fresh twist on a sloppy joe. I usually only make them for the kids, but even I liked this one and the kids loved it. We used grated cheddar on top instead of slices.

My kids loved this and it was so easy to make, which made me love it!! They didn't even realize it had salsa in it until my daughter spotted the peppers and onions. (They refuse to eat tacos!)

My kids said it was "very good" but that they would rather have our regular sloppy joe recipe. They did happily eat it. It just won't become a regular here.
