Cheddar Chicken and Potatoes recipe
In this twist on meat and potatoes, chicken breasts carry the day. Bacon adds flavor and Cheddar cheese melts on top for ooey-gooey goodness.

We thought this was just all right. The chicken didn't have enough flavor. Next time I will definitely season the chicken first, cook the potatoes for longer, and add some sour cream to the potatoes at the end.

This wasn't bad but it wasn't great either. I would reccomend seasoning the chicken with your favorite seasons. I haven't made it again yet but I plan on seasoning the chicken next time to see if that makes it better.

I added cumin, seasoned salt and pepper to the chicken and potatoes and it was delicious. This would make a good breakfast skillet dish.

I have to agree with some other ratings that on its own the potatoes were a little bland. I used a BBQ seasoning as well as salt and pepper. I also added a spoon full of sour cream to each serving. I think I may also use a few more strips of bacon next time.

This was much better than I thought it would be as I had never cooked with the frozen potato/pepper/onion mixture before. I used the ready to serve bacon pieces. I thought the bacon and potato mixture had plenty of great flavor. Even with fat free cheddar, it was so cheesy and tasty. Husband and I love it.

I found the potatoes to be a little bland when tasting them while it was cooking, so I added Season-All to them. I also cooked them longer, so that they were crispy. Overall, it was a good easy meal.

I didn't have chicken breasts so used 4 pork chops. I used shredded potatoes with onion & pepper, the ready bacon, & co-jack shredded cheese. I cooked the pork chops & set them aside, did the potatoes like the recipe said & added frozen corn & instead of putting the chops back on top of the potatoes, I put the cheese on and let the cheese melt into the potatoes & had the pork chops without cheese on top. It was very good. My family thought this was a "keeper"

It was ok. My fiance liked it more than I did, I think next time I will season the potatoes more since they were a little bland.

Delicious!! I couldn't find the potatoes with peppers and onions so I got a bag of hash browns and cut my own peppers. I used a half of each a red and green small pepper plus half of a small onion. they measured about 2 cups and then just added 2 cups of hash. I also didn't have bacon so I used the Real Bacon bacon pieces. I cooked the chicken then added the potatoes, peppers and onions. When that was done I added the bacon and topped with cheese. It tasted delicious! I bet it would work well with ham and some scrambled eggs as a breakfast dish.
