Cheesy Chicken Pot Pie

Cheesy Chicken Pot Pie recipe
Some classics can't be improved. Pot pie isn't one of them. A delicate crust yields to veggies and chicken in a cheesy sauce. Yes, we said cheesy.

We loved this recipe with just a few changes. I use a rotisserie chicken from our local groc. store deli. It adds just a little something extra good to the taste. Let it cool then de-boned and shredded the meat. Plus I use shredded cheddar as others recommended.

I loved this recipe! I made it with sharp cheddar shredded cheese instead of velveeta! Yum!

My family loved this, but I made it in a frozen pie crust and topped with the rolls. I also substituted a handful of cheddar and added some sauteed onions, mushrooms and garlic for more flavor. Making it again tonight!

I am very disappointed with this recipe. I rarely cook because I don't trust my cooking abilities but this sounded easy. Since I don't know how to cook, I follow every recipe exactly but I wish I had listened to other suggestions on here. Don't use the Velveeta!! If you really want to add cheese, use a small handful of shredded cheese. The Velveeta made this way to heavy.

Looks and sounds delicious. I'll give it a try.

I thought this recipe was pretty good. Next time I would cut back on the cheese, it was VERY cheesy. I also cooked it for about 20 mins longer. It was extremely easy to make.

I also cut the recipe in half cause it was just me and the girls and from what I read the dough isn't that great the next day. It was really good. My daughters especially liked the crust. We do have some leftovers but I think I am going to rebake it to see if it keeps the dough from becoming gooey.

Before I put the pie into cook, I beat an egg and brushed it over the dough. It gave the crust a glistening appearence and flakey texture. My husband couldn't believe I made this, it looked like it came from the store!

LOVED IT! I cut back on the amount of chicken and veggies and made it in a 9x9 pan because I was only cooking it for my husband and I and it worked out great. I added fresh veggies but I microwaved them a bit first and it was very good. My husband (who can't cook and never can help with dinner ideas) thought it was much tastier than traditional pot pie. I am making again tonight and I am going to add a few baby red potatoes in with the veggies and use regular pie crust since I don't have any more rolls on hand!

Made it with cream of chicken w/ herbs soups and seasoned the chicken during cooking with garlic poweder and pepper to add some more zing. It was a hit and everyone ate it. Leftovers are a bit less tasty as the pastry topping doesn't rehear as well but this is a keeper.
