Cheesy Chicken Pot Pie

Cheesy Chicken Pot Pie recipe
Some classics can't be improved. Pot pie, it turns out, isn't one of them. A delicate crust yields to veggies and chicken in a—wait for it—cheesy sauce. Yes, we said cheesy.

I thought this recipe was pretty good. Next time I would cut back on the cheese, it was VERY cheesy. I also cooked it for about 20 mins longer. It was extremely easy to make.

I also cut the recipe in half cause it was just me and the girls and from what I read the dough isn't that great the next day. It was really good. My daughters especially liked the crust. We do have some leftovers but I think I am going to rebake it to see if it keeps the dough from becoming gooey.

Before I put the pie into cook, I beat an egg and brushed it over the dough. It gave the crust a glistening appearence and flakey texture. My husband couldn't believe I made this, it looked like it came from the store!

LOVED IT! I cut back on the amount of chicken and veggies and made it in a 9x9 pan because I was only cooking it for my husband and I and it worked out great. I added fresh veggies but I microwaved them a bit first and it was very good. My husband (who can't cook and never can help with dinner ideas) thought it was much tastier than traditional pot pie. I am making again tonight and I am going to add a few baby red potatoes in with the veggies and use regular pie crust since I don't have any more rolls on hand!

Made it with cream of chicken w/ herbs soups and seasoned the chicken during cooking with garlic poweder and pepper to add some more zing. It was a hit and everyone ate it. Leftovers are a bit less tasty as the pastry topping doesn't rehear as well but this is a keeper.

I modified this recipe a bit, my family was not excited about adding cheese to the recipe. Instead, I used a can of cream of chicken soup and a can of cream of celery soup, two packages of pre-cooked chicken cubes, thawed pkg of frozen peas and carrots and a can of diced potatoes. It baked for about 35 minutes and the crust turned out almost perfect, it was still a little soft on the underside. Next time I think I may cook for about 40 minutes and see how it works.

Me and my family loved it and it was so easy to make. I normally don't like pot pie, but I thought I's try it and I was pleasantly surprised by it.
