This is a good starter recipe. The first time I made it as is and it was rather bland. The sencond time I spiced up the rice and chicken with a packet of taco seasoning and added choppend jalapeno and diced onion. I think next time I'll marinate the chicken for a couple of hours or over night, with a southwest marinade.

LOVED this! I layered some corn, onions, and a can of tomatoes with green chilis (instead of salsa) on top of the rice mixture. To the soup mixture I added cumin, chili powder, and a hint of garlic. And it made 8 healthy, hearty servings. Only 7 WW points plus!!! Can't wait for tomorrow's lunch so I can have some more!!!

My family loved this recipe..I did however tweek it a little! I used chicken broth instead of water, added a packet of taco seasoning to the rice mixture and also a tad bit of chili powder, added a can of corn instead of the yellow peppers, used extra salsa and extra cheese! Also, added a little bit of finely diced jalapenos to the salsa to add a bit of kick to it. I will definitely make this again!!!!

Quick and easy. Family liked it. I added some chili powder and used saffron rice.

I cut the chicken into bite size pieces, added a can of corn, and chili powder and cayenne. I did not use cilantro. Turns out great every time as long as it's spiced up a good bit.

This recipe is a winner! I did add a can of diced green chilis but otherwise followed the recipe as written. Delicious! Even my picky 11-year old loved this dish - especially the rice, which is huge! This one is definitely going into rotation. Yum!

I made all the changes that everyone recommended and it was still gross. I used green pepper, added onion, seasoned the chicken, used more salsa, used broth instead of water and used a ton of cheese. I will not make this again...it was a waste of good ingredients.

AWESOME! Add can of mexican corn & can of diced tomatoes with green chili's. (ok to use regular corn and regular diced tomatoes. ok with cream of mushroom soup also)

There is definitely somthing missing from this recipe. I used the chicken boullion cubes in the water, added a can of tomatoes with chillis, substituted a green pepper for the yellow, added a chopped red onion, added way more salsa than 1/2 cup and it still was kind of bland and just bla. After reading some of the other reviews I think this recipe may be missing cumin.

Love this recipe, I substituted the white rice with brown rice and it came out deliciously. I will definitely make it again, it was so easy to throw together and bake. I definitely recommend this, even for kids.
