Layered Mexican Bake

Layered Mexican Bake recipe
Low-cal Mexican bake. Yes, really. Remind yourself you're eating smart as you dig into layers of tortilla, salsa, beef and veggies. (Your brain might tell you you’re lying.)

I fixed this for dinner tonight, and I used ground turkey instead of beef. It turned out really, really, REALLY good. It is VERY filling and yummy. There is lots of left overs too!!!

One of my favorites! I didn't add as much onion...seemed like too much. Otherwise, very good!

This was actually very good.. I omitted the sour cream and substituted the meat for turkey meat to make a lighter version of this. it was wonderful and i definitely would make it again

Quick and easy! I added a can of refried beans to the meat for texture-came out great!

This was AWESOME! I did replace the green peppers with red peppers since that is what I had on hand. I was afraid it would be a bit spicy but it wasn't at all! I also chose to leave the sour cream out and put it on top when served. I did this in hopes that the shells wouldn't be "soggy" like many reviewers said. The shells were still "moist" but I wouldn't say "soggy." My 1 year old even loved this dish!

This was excellent! My whole family loved it. I omitted the corn to cut down on the starches, and used lean ground turkey instead of beef. It still had wonderful flavor!
