Layered Mexican Bake

Layered Mexican Bake recipe
Low-cal Mexican bake. Yes, really. Remind yourself you're eating smart as you dig into layers of tortilla, salsa, beef and veggies. (Your brain might tell you you’re lying.)

My family loved this recipe, though I personally thought there was to much corn but that is no big deal will just put less next time. I made it though with corn tortillas and regular sour cream since that is what I had in the house. Since I used corn tortillas there was 9 little tortillas instead of 3 8-inch wheat ones.

Mine looked nothing like the picture, but it has nice flavor. I do agree with other cooks, the tortilla shells did get a bit soggy. Still, I would make it again

I love this recipe! I substituted homemade Pica De Gala instead of the onion and green pepper, and I also used Taco Bell Taco Seasoning instead of the chili powder because this was what I had on hand. I adjusted the calorie and carb intake (which was almost nothing) from the packages. It was great!

I really didnt like this recipe. The tortilla inbetween the layers was soggy. It just seemed like a huge unappetizing blob of food.

Great recipe, very hearty. Portions are almost too large. I will make this recipe again.

All three of my boys and my husband loved this dish. The only change that I did was omit the sour cream before cooking but served it after on the side.

Loved it! Only change, my family isn't hip on salsa, so I added taco seasoning, it was yummy.
